Strawberry Sorbet

What you need for 4-6 persons is:
22g (˝lb granulated sugar)
600mls (˝ pint) water
700g (˝lb) strawberries
2 egg whites (use pasteurised or equivalent)
Hand whisk or blender

Make sure your freezer is freezing properly (switch on the booster if you have one)

What you do is:

  • Dissolve the sugar in the water gradually bringing it to the boil. Boil it continually for ten minutes.
  • Allow the syrup to cool.
  • Sieve the strawberries or use a blender to knock it down.
  • Separate the egg whites from the yolks. Put the yolks to one side
  • Whisk or blend the egg whites to a stiff peak
  • Mix the water, the syrup and the puree strawberries together.
  • Pour the content into an ice tray and half freeze it in the freezer
  • Remove it from the freezer and beat it to death (metaphorically speaking).
  • Fold in the beaten egg whites place back in the freezer to continue freezing.

    When it is frozen right through it is ready. (Remember to turn off freezer booster if you used it)
