What you need for 4 persons is:
1 Aubergine, sliced and sprinkled with salt leave this at least 30 minutes
3 tablespoons vegetable or olive oil
½ clove garlic crushed
2 courgettes sliced
1 green pepper (seeds removed and sliced)
2 tomatoes skinned and chopped (see minestrone recipe)
196g (7 oz) can tomatoes
112g (4oz) mushrooms, sliced
1 finely chopped onion
mixed fresh herbs or 1 teaspoon of dried if you have to
salt and ground pepper

What you do is:

  • Wash the salted aubergine in cold water to rinse the salt off.
  • Dry it gently with kitchen paper.
  • Heat the oil and fry the vegetables (but not the tomatoes).
  • Add all the remaining ingredients and cook thoroughly.
  • Serve as a starter or vegetarian dish or main meal accompaniment.
