Prawns Highland Style

For six persons you need:
6 individual oven proof dishes
1oz butter
1 small onion finely chopped
12ozs (336g) shelled prawns
4 tablespoons double cream
2 tablespoons best Highland whisky
4ozs (112g) mature cheddar cheese (grated)
Salt and pepper from the mill
1 tablespoon of fresh chopped parsley

What you do is:

  • Heat the butter in a saucepan and fry the onions until soft.
  • Stir in the prawns and heat them through, when hot dispense them into their individual dishes.
  • Pour the cream into the now empty saucepan Add the whisky and a drop more if you are not driving Stir over a low heat remembering not to let it boil or it will curdle.
  • When sufficiently hot, pour the cream mixture over the prawns.
  • Sprinkle with cheese and brown under the grill.
  • Serve hot in the dishes garnished with the chopped parsley.
