For six persons you need:
6 individual oven proof dishes
1oz butter
1 small onion finely chopped
12ozs (336g) shelled prawns
4 tablespoons double cream
2 tablespoons best Highland whisky
4ozs (112g) mature cheddar cheese (grated)
Salt and pepper from the mill
1 tablespoon of fresh chopped parsley
What you do is:
Heat the butter in a saucepan and fry the onions until soft.
Stir in the prawns and heat them through, when hot dispense them into their
individual dishes.
Pour the cream into the now empty saucepan Add the whisky and a drop more
if you are not driving Stir over a low heat remembering not to let it boil or
it will curdle.
When sufficiently hot, pour the cream mixture over the prawns.
Sprinkle with cheese and brown under the grill.
Serve hot in the dishes garnished with the chopped parsley.
