What you need for 6 persons is:
84g (3ozs) macaroni
28g (1oz) margarine
28g (1oz) plain flour
½pt (250ml) milk
140g (5oz) grated mature English Cheddar cheese
½ teaspoon dry English mustard
pinch of cayenne pepper
salt and ground black pepper

What you do is:

  • Put the macaroni in a saucepan and cover it with boiling water from the kettle
  • Cook until soft and you can pinch a strand between your finger and thumb
  • Drain it when it’s cooked and keep hot while you prepare the sauce.
  • To make the cheese sauce, Put the milk on to heat first, then melt the margarine in another saucepan. Add the flour to the melted margarine, mix and blend it with a wooden spoon it makes a gooey dough bigheads call a "roux".
  • When the milk is nearly at the boil start adding it bit by bit to the roux mix it each time adding a bit more milk and smoothly mixing with the wooden spoon. Doing it this way makes sure of a smooth sauce big heads call a "béchamel".
  • Add the cheese and seasoning to the béchamel. Place the macaroni in an oven proof dish, pour over the sauce and place the whole dish under the grill to go golden brown.
  • Serve as snack or a complete meal with additional vegetables.
