Shoulder Of Lamb With Rosemary

You Will Need
3lb Shoulder of Lamb
3tbsp oil
2 medium onions sliced
4oz (112g) mushrooms, sliced
3tbsp flour
½pt (250ml) red wine
15oz (420g) can of tomatoes
2tsp rosemary
seasoning to taste

What You Do Is:

  • Place the shoulder of lamb in a large casserole dish or roasting pan.
  • Frt the onions and mushrooms in oil until soft.
  • Add the flour and gradually stir in the wine.
  • Add the remaining ingredients and simmer for 3-4 minutes stirring well.
  • Adjust seasoning to taste.
  • Pour the sauce over the meat,cover tightly with lid or foil and cook.
  • Cook at 140ºC for 2½ TO 3 hours.
