You Will Need
3lb Shoulder of Lamb
3tbsp oil
2 medium onions sliced
4oz (112g) mushrooms, sliced
3tbsp flour
½pt (250ml) red wine
15oz (420g) can of tomatoes
2tsp rosemary
seasoning to taste
What You Do Is:
Place the shoulder of lamb in a large casserole dish or roasting pan.
Frt the onions and mushrooms in oil until soft.
Add the flour and gradually stir in the wine.
Add the remaining ingredients and simmer for 3-4 minutes stirring well.
Adjust seasoning to taste.
Pour the sauce over the meat,cover tightly with lid or foil and cook.
Cook at 140ºC for 2½ TO 3 hours.
