Ingredients
6ozs 175g plain flour
15ml (1 tablespoon) baking powder
30ml (2 tablespoons) caster sugar
2 medium eggs
142ml (carton sour cream or crème fresh)
100ml (3˝ fl oz) milk
1 banana, sliced
1small mango, sliced
Dressing sauce to cover it with
2 large seedless oranges
85g (3oz) caster sugar
40g (1˝ozs butter)
2 tablespoons lemon juice
What you do is:
Sift the flour, baking powder and sugar together.
Make a dent in the centre.
Whip the eggs with your choice of cream.
Pour it into the indentation, stir until mixed thoroughly together.
This should now be a smooth batter.
Grease a hot griddle or thick-bottomed frying pan.
Heat until very hot.
Pour out spoonfuls of the batter onto the hot griddle or pan.
Cook until bubbles form and the underside is golden brown.
(lift carefully with a spatula to view the underside).
repeat the process for each pancake. Turn each pancake to cook both sides.
Continue until all the mixture is used, it should do around 12 pancakes.
For the garnish and sauce
Finely grate the zest of one large orange.
Squeeze the juice from both oranges into a small saucepan.
Add the sugar butter and lemon juice.
Heat the mixture until the sugar dissolves.
Boil the sauce rapidly for around 4-5 minutes (take care not to let it burn).
Stack up the pancakes with banana and pieces of mango in between each layer.
Pour the hot syrup over the stack sprinkle on the grated orange zest.
Enjoy with chocolate sauce or ice cream or whatever takes your fancy
