Chicken Paprika

For 4 persons you need:
3-4chicken portions
¾ lb (336g) carrots and onions, peeled and sliced
4oz (112g) butter
1 (de-seeded) green pepper sliced.
1tsp paprika
1tbsp tomato
½ (250ml) chicken stock
salt and pepper

What You Do Is:

  • Clean wipe and dry the chicken with clean kitchen paper.
  • Coat the chicken in the seasoned flour.
  • Fry carrots and onions in half the butter until golden brown, remove from the pan and put to one side.
  • Add the rest of the butter to the pan and fry the chicken until also golden brown.
  • Return the carrots and onions to the pan, add the chopped pepper, paprika, tomato puree and the remaining flour. Stir well to avoid lumps in the sauce.
  • Add the chicken stock stirring gently all the time, bring to the boil and adjust the seasoning.
  • Place in a casserole dish, add a lid and complete the cooking in the oven at 150°C bottom shelf for two hours.
