For 4 persons you need:
3-4chicken portions
¾ lb (336g) carrots and onions, peeled and sliced
4oz (112g) butter
1 (de-seeded) green pepper sliced.
1tsp paprika
1tbsp tomato
½ (250ml) chicken stock
salt and pepper
What You Do Is:
Clean wipe and dry the chicken with clean kitchen paper.
Coat the chicken in the seasoned flour.
Fry carrots and onions in half the butter until golden brown, remove from
the pan and put to one side.
Add the rest of the butter to the pan and fry the chicken until also golden
brown.
Return the carrots and onions to the pan, add the chopped pepper, paprika,
tomato puree and the remaining flour. Stir well to avoid lumps in the sauce.
Add the chicken stock stirring gently all the time, bring to the boil
and adjust the seasoning.
Place in a casserole dish, add a lid and complete the cooking in the oven
at 150°C bottom shelf for two hours.
