Chicken Oregano

For 4 Persons You Will Need:
2oz (56g) butter
1 onion sliced in rings
8 chicken drumsticks
1oz (28g) flour
15oz (420g) can of chopped tomatoes
˝pt (250ml) chicken stock
2 tsp oregano
1tbsp tomato puree
˝tsp sugar
1 green pepper de-seeded and sliced
4ozs (112g) grated cheese
salt and pepper

What You Do Is:

  • Melt the butter in the pan, then add the onions.
  • Fry the onions gently for a few minutes until soft.
  • Add the chicken and fry for about 5 minutes until the meat is golden brown.
  • Remove the chicken and put to one side.
  • Add the flour to the pan and stir into the residue.
  • Add all the remaining ingredients and stir to the boil, allow to simmer.
  • Add the sauce to the the chicken in a casserole dish and place in the oven at 170°C.
  • After 45 minutes cooking sprinkle the cheese on top and return to the oven for a further 20 minutes without a lid.
