Chicken Oregano

For 4 Persons You Will Need:
2oz (56g) butter
1 onion sliced in rings
8 chicken drumsticks
1oz (28g) flour
15oz (420g) can of chopped tomatoes
˝pt (250ml) chicken stock
2 tsp oregano
1tbsp tomato puree
˝tsp sugar
1 green pepper de-seeded and sliced
4ozs (112g) grated cheese
salt and pepper
What You Do Is:
Melt the butter in the pan, then add the onions.
Fry the onions gently for a few minutes until soft.
Add the chicken and fry for about 5 minutes until the meat is golden brown.
Remove the chicken and put to one side.
Add the flour to the pan and stir into the residue.
Add all the remaining ingredients and stir to the boil, allow to simmer.
Add the sauce to the the chicken in a casserole dish and place in the oven
at 170°C.
After 45 minutes cooking sprinkle the cheese on top and return to the oven for
a further 20 minutes without a lid.
