Bread and Butter Pudding:

What you need for 4 persons is:
2 pint oven dish
6 to 8 slices of old bread, brown and white mixed works well (make sure there is no mildew on it).
4ozs sultanas
4 large eggs
2pints full cream milk
2ozs granulated sugar
2ozs castor sugar
4ozs butter
ground nutmeg

What you do is:

  • Cut all the crusts off the bread then cut each slice into four diagonal wedges.
  • Wash the sultanas and place them in the bottom of the dish.
  • Carefully arrange the bread in the dish alternatively in a rough "herringbone" style.
  • Whisk the eggs together in a bowl with the sugar.
  • Pour the mixture over the bread and sultanas.
  • Sprinkle the granulated sugar and the nutmeg over the top.
  • Bake in a medium oven (about 160C) for 30 minutes.
  • Turn the heat down to 80C and cook for a further 10 minutes.
  • Serve piping hot or cool it and serve cold from the refrigerator.

    Precautions:

    Do not leave this dish lying around at room temperature.

    Do not reheat.
