Topside With A Garlic Black Pepper and Honey Coat

What You Need Is:
5lb joint of Topside (aprox 2.75kg)
2 - 3 fresh cloves garlic
3 tbsps of honey 3 x 15ml (2-3tbsp) ground black peppercorn
A baking tray suitable for a large joint (forgive the expression)
A baking rack to place the joint on

What you Do Is:

  • Place the joint on the rack in the roasting tin
  • Peel and crush the garlic and mix it with the ground peppercorns & the honey
  • Rub the mixture over the joint and place it in a pre-heated oven @ 180ºC (º350F)
  • If you like it rare cook it for approx 2 hours
  • If you like it medium cook it for approx 2½ hours
  • If you like it Well done cook it for approx 3 hours
  • When cooked allow the joint to stand for 10 - 15 minutes before carving.
