How To Prepare and Cooked Baked Vegetables: by Ian Jenkins
Suggested Vegetables and Amounts for 4 Persons (Or use What's In Season Traditionaly)
450g (1lb) Courgettes
450g (1lb) carrots
225g (8oz) asparagus
225g (8oz) fennel
1 lemon
225g (8oz) red onions
1 bulb of garlic
100ml virgin olive oil
75ml (2½ fl oz) clear honey
Salt & ground peppercorn
Sprig of Rosemary
What you do is:
Wash all the root vegetables (don't peel them)
Slice the lemon
Cut the red onions into quarters
Cut the vegetable into chunky slices
Put all the vegetables into an oven tray and bake then for 30 minutes turning once mid-way (the vegetables not you!) cook at around 170°C gas mark 6 untill slightly crunchy
