How To Make Apple & Spearmint Fool by Ian Jenkins

What You Need (For 6 Persons) is:
Casserole style oven dish
Sorbet glasses
Cheese grater
Balloon whisk or blender to whip the cream
1.5kg cooking apples
5 oz castor sugar
juice of one orange
� pint double cream
spearmint flavouring essence
6 sponge finger biscuits at serving time
1 Small bar of plain dark chocolate

The above will do six medium sized sorbet glasses. Increase your ingredients for greater numbers

What you do is:

Preheat the oven. Peel & core the apples. Wash and slice them. Then put them into the oven dish and add the orange juice.

Cover with a lid and cook in the oven for 30 minutes until soft and fluffy.

Remove from the oven,allow to cool so you won't scold yourself then sieve them to a puree or mash them with a wooden spoon.

Allow the apple mixture to cool some more.

Whip the cream until just stiff (don't over-whip it) fold it into the apple puree. Separate half the mixture and add a few drops
of the spearmint essence to one half.

Fill glasses with alternate layers of plain green, and mint. The two colours should contrast nicely in the glass.

Dip a sponge finger in each and serve sprinkled with grated dark chocolate and a mint leaf (optional).
