How To Make Apple & Walnut Cake by Ian Jenkins

What You Need Is:
A decent sized mixing bowl
A sieve to sift the flour
8ozs (224g) plain flour (a good baking tin)
1 Teaspoon of baking powder
1 teaspoon fresh ground cinnamon ( Not some that's been lying around for months or years)
1 teaspoon of mixed spice (as cinnamon)
40zs (112g) butter
6ozs (168g) soft brown sugar
3 medium eggs
4ozs (112g) raisins
4ozs (112g) chopped walnuts
8ozs (224g) apple puree

What you do is:

Grease the tin with a little oil, spinkle some flour (not from your 8ozs ) over the tin, tappping it around until the grease is all lightly coated with flour. (this stops your cake sticking to the tin and making you very very cross)

set the tin aside in the refridgerator for now.

Sift the flour,baking powder, cinnamon and mixed spice into the mixing bowl.

Rub in the butter(with a clean pair of hands) until the mixture resembles breadcrumb consistency.

Now stir in the sugar,beat in the eggs (be careful eggs now have a helpline).

Stir in the rest of the ingredients.

Mix the whole lot thoroughly and turn it carefully into the baking tin.

Cook in a moderate oven (170�C) bottom shelf for 1-1� hours, fan ovens need around 10 degrees and roughly 15 minutes less (but check your cooker manual if in doubt). Don't just do it and send a angry email to us because you couldn`t be bothered to check the manual okay!
